No Potato Salad.

Ingredients

1 head cauliflower, chopped into small florets or 1lb frozen
1 red onion, finely diced
4 eggs, hard boiled, shelled, and diced
2 Tbs mayonnaise (homemade?)
1 Tbs mustard (your choice of type)
Sea Salt
You can add bacon, pickles, etc. make sure what ever you add is paleo.

Instructions

Add 1″ of water to the bottom of a medium pot (with lid). Insert steamer basket and fill with chopped cauliflower. Cover.
Steam cauliflower on the stove top over medium-high heat until slightly tender, about 10 minutes after water begins to simmer (overcooking will develop a stronger “cauliflower” smell, and a mushy texture).
You can also microwave to cook.
Drain cauliflower and rinse with cold water to cool immediately. Place in a large bowl
You can leave cauliflower in florets, mash it, chop it, blend it depends on what consistency you want.
Add onion and egg.
Stir in mayonnaise, mustard, and sea salt.
Serve immediately or store in refrigerator.
